Suppengrün: The Aromatic Base of German Cuisine



Think of Suppengrün  as the German take on Mirepoix. It literally means "soup greens," and is often the starting point for soups, stews, and other savory German dishes. A traditional Suppengrün consists of three main ingredients:

  • Carrots: 1 part
  • Celeriac (celery root): 1 part
  • Leeks: 2 parts
This is usually cooked in a neutral oil or butter. Celery can be substituted for the Celeriac is that is difficult to find in your area.
