The Holy Trinity, the Mirepoix of Creole and Cajun Cooking
Just like mirepoix, the Holy Trinity is a trio of aromatic vegetables used in Cajun and Creole cooking, and includes onion and celery cooked in butter. The difference is this trio consists of green bell peppers rather than mirepoix's carrots. The three ingredients are use in roughly even proportions. Often garlic is also added. This is the base of Louisiana dishes such as crawfish étouffée, gumbo, and jambalaya.
