Southwest Style Ground Chicken or Turkey


2 lbs ground chicken or turkey
1 red bell pepper, finely diced
1 shallot, large, or two small, finely diced
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp coriander
1/2 tsp onion powder
1 tsp kosher salt
1/4 tsp black pepper
1/4 tsp cayenne pepper

Using your hands, combine the chicken or turkey with all of the other ingredients in a large mixing bowl. Cook and use as desired.

If you want to make into burger patties, add:
1/4 cup panko breadcrumbs

Form the mixture into six roughly equal sized portions.
If using a grill pan, spray with cooking spray. Place each portion on the preheated grill pan, then smash with your spatula to form a patty shape.
Grill until cooked through, approximately 5 minutes per side. Internal temperature should be 165F.
