Sofrito, the Aromatic Base of Spain
In modern Spanish cuisine, sofrito consists of garlic, onion, tomato and bell peppers cooked in olive oil. (This is a variation of the Italian Soffritto, which has carrot and celery rather than garlic, tomato and bell pepper.) Often spiced with paprika and saffron, it is a base for many dishes from Spain, including Paella.
