Portugal's Refogado
Rofogado is the base for Portuguese cooking and is a combination of garlic, onion and tomato cooked in olive oil. Often it is spiced with paprika and bay leaves. This base can be used for many dishes including Arroz de Marisco, in which shrimp stock as well as a variety of seafood such as scallops, clams, mussels and shrimp are added to the rofogado.
