Mirepoix

Mirepoix is a base for many French recipes such as soups, stews and sauces. It is  made from diced celery, onions, and carrots (one part celery, two parts onions, and one part carrots) that are cooked slowly, usually with butter, over very low heat, as the intention is to intensify the vegetables' flavor, not to caramelize them.
