Hogao, Columbia's Aromatic Base

Hogao is a base preparation or seasoning for many Colombian dishes, but it also is used as a condiment alongside many dishes such as Bandaja Paisco and Arepas. It's usually a savory mix of tomatoes, scallions, and garlic sautéed in a neutral oil until soft and fragrant, but every family has their own version, some substituting onions for the scallions, adding cumin or Sazón Goya.
