“A la Mexicana” (Mexico's Aromatic Base)
“A la Mexicana” in the name of any dish is a clue that it is usually prepared with tomato, onion, and jalapeño or serrano chile, and cooked in lard. This is the base of many Mexican dishes such as Bistec. This combination is also used as a condiment and is then called pico de gallo.
